Healthy Dessert that tastes like a Snickers

Curb your cravings and satisfy your sweet tooth with this healthy version of a Snickers bar. My bet is you’ll love them, and you’ll feel just like you’re indulging in a Snickers without all the yucky ingredients.😋

And they’re so simple – 5 minutes to prep, 20 minutes to freeze, and a healthy dessert as a result.

Ingredients:
Organic pitted dates
Organic peanut butter (or nut butter of your choice)
Dry-roasted or raw peanuts (or nut of your choice)
Dark chocolate
Flaky sea salt (I use @maldonsalt)

Directions:
Fill dates with peanut butter.
Cover each date in melted dark chocolate.
Top with the crushed nuts and sea salt.
Freeze for 20 – 30 minutes.

Store in an airtight container and enjoy!

Crockpot Beef Roast

We kicked off crockpot season with this delicious roast, and it has become a regular in our rotation. I followed this recipe from Daddio’s Kitchen, and it was so good!

Serve over rice or mashed potatoes, and hopefully it will be a family hit like it was at our house.😋

Ingredients:

3 lb beef chuck roast
1½ cups beef bone broth
⅓ cup worcestershire sauce
2 tbsp grass-fed butter
4-6 carrots peeled & cut into large chunks
½-1 lb red potatoes cut into chunks
1 yellow onion cut into 2in chunks
1 tbsp sea salt
1 tsp black pepper
1 tsp garlic powder
2-3 fresh thyme or rosemary

Instructions:

  • In a crockpot, add in your chuck roast. Season both sides with the seasonings & press it into the roast.
  • Pour beef broth around the chuck roast, but not on the roast so you don’t remove all the seasonings.
  • Pour Worcestershire sauce all over the top of the roast. 
  • Add the chopped veggies all around the roast. This will make them very soft! If you want them a little less soft, add them in at the last 2-3 hours of cooking.
  • Season the veggies with a sprinkle of sea salt & pepper. 
  • Add cubes of butter on top of the roast & veggies. Top with fresh thyme or rosemary.
  • Cover the crockpot & cook on high for about 7-8 hours until the internal temp of 202F degrees.

✨Family News ✨ It’s amazing what can happen in a week, and what a wild one it has been. As a single mom, my number one priority will ALWAYS be my children and their needs, and for the past year, I have been praying hard for my little family. My Favorite Air Fryer

The air fryer is a necessity in our house, and this is my favorite so far. It’s so easy to use, it has every function I need, and I was sold when I saw how perfect our steaks and burgers were cooked. Delicious every.single.time.

Here’s how I cook our steaks and burgers in the Cosori air fryer:

Steaks:

Bring to room temperature.

Season with Worcestershire sauce, salt, and pepper.

Select “Steak” button on air fryer, and then hit start. Easy peasy!!

Burgers:

Season with Worcestershire sauce, salt, and pepper.

Cook for 7 minutes at 380 degrees.

If desired, add cheese slices to burger patties and cook for 1 additional minute at 380 degrees.

Blueberry Crumble

I had the most delicious meal at a local restaurant for my birthday last month, and we finished it off with the blueberry cobbler for dessert. I have been craving it ever since, so I had to try to recreate it at home.

This recipe is pretty darn close, and I hope you enjoy it as well.

INGREDIENTS:

4 1/2 cups blueberries (fresh or frozen)

2 tablespoons granulated sugar

2 tablespoons all-purpose flour

CRUMBLE TOPPING:

1 cup all-purpose flour

¼ cup granulated sugar

¼ cup brown sugar

½ teaspoon cinnamon

¼ teaspoon salt

½ cup cold unsalted butter, cut into cubes

DIRECTIONS:

Preheat the oven to 375°F.

In a large bowl, combine the flour, sugar, brown sugar, cinnamon, and salt for the crumble topping.

Using a knife, cut the cold, butter into cubes and add to mixture. Blend until it starts to stick together, about 3 to 4 minutes (I use my hands for this). Mix until it is no longer powdery.

Refrigerate while preparing the blueberries.

In a 9×9-inch dish or a 2 qt baking dish, combine blueberries, 2 tablespoons sugar, and 2 tablespoons flour. 

Sprinkle the crumble topping over the blueberry mixture and bake for 35-40 minutes or until the top is golden brown and the fruit is bubbly.

Serve warm with whipped cream, ice cream, or plain – Whatever your heart desires. Enjoy!

Lasagna Soup

I started making this soup over the Christmas holiday last year, and I couldn’t get enough of it! It’s so easy to prepare, and I crave it regularly. I used a combination of ground venison and Italian sausage, but you can substitute ground beef if you’d like.

I hope you enjoy it, and please let me know if you try it!

INGREDIENTS:

1/2 pound lean ground beef

1/2 pound ground Italian sausage

salt and freshly ground black pepper, to taste

1 yellow onion, chopped

1 Tablespoon olive oil

3 cloves garlic, minced

2 Tablespoons tomato paste

24 ounce marinara sauce

1/4 teaspoon red pepper flakes

2 Tablespoons fresh parsley, chopped (or 2 tsp dried)

1/2 teaspoon dried oregano leaves

1 teaspoons dried basil

7 cups low sodium chicken broth (or vegetable broth)

9 lasagna noodles, broken into pieces

2 cups fresh spinach leaves (optional),

10 ounces ricotta cheese (or cottage cheese)

1 cup shredded mozzarella cheese

1/2 cup freshly grated parmesan cheese

fresh basil, for serving

INSTRUCTIONS:

In a large pot over medium-high heat, cook ground beef and sausage until browned. Season with salt and pepper as you cook. Drain grease and remove meat from the pot.

In a large pot heat olive oil over medium heat. Toss in diced onion and sauté for about 5 minutes, stirring occasionally. Add in minced garlic and cook for another minute or two.

Stir in tomato paste, marinara sauce, spices, and broth. Return meat to pot.

Bring to boil then add lasagna noodles (broken into 4ths) to pot and reduce heat to medium-low and cook, stirring occasionally, until noodles are tender. Add spinach, if using.

In a small bowl, stir together mozzarella, Parmesan and ricotta cheeses.

Ladle the hot soup into bowls, and add a scoop of the cheese mixture on top. Garnish with fresh basil, and enjoy!

Favorite Healthy Home Items

As a mom of two young children, I’m always on the hunt for safe, non-toxic products for our home. In an effort to create a healthy living space for my little family, I’ve gradually made some swaps over the years.

Here are a few of the healthy home items that I can’t live without:

  1. Non-toxic cleaning products – I made a commitment to try to rid our home of cleaning products full of toxins and fragrance. With Branch Basics, I love that I can mix cleaning products for various areas of our home using one concentrate.
  2. Air filters/purifiers – My son and I both suffer from severe allergies, so clean air throughout our house is essential. I have this air filter in my son’s room, and it has been wonderful.
  3. Recyclable sandwich bags – In an effort to ditch the plastic, I pack all my kids’ lunches and snacks in these recyclable and sealable food storage bags. Not only are they safer for my little ones, they also have the cutest designs!
  4. Non-toxic laundry detergent – I’ve been a Molly’s Suds fan for years, and I really love their entire product line. I try to avoid all synthetic fragrances since we’re sensitive to scents, so these laundry products have been a lifesaver.
  5. Glass storage containers – Bye, bye plastic food storage! When I tossed all my nonstick pots and pans, I decided to get rid of all my plastic containers , too. These glass containers are the perfect size, and I keep adding more sets to my collection.
  6. Non-toxic scents and candles – I love the ambiance that a burning candle brings to my home, but there are only a few natural ones that don’t cause allergy flare-ups. I just recently added this diffuser to my collection, and it has been so nice to blend my essential oils again.

Coming back.

I can’t tell you how thrilled I am to be back, and I’m so excited to welcome you to this new, refreshing blog space. I spent many nights over the past few months staring at the blank editing screen on my computer, unsure about where to even begin, and then eventually (and often) closing the tab to try again another day. But today is the day for this new journey to begin! Blogging has always brought me such joy, and I have felt a strong tug at my heart to jump back in with all my might.

My hope is that I can take you along on my journey through motherhood, homemaking, product testing, house-flipping, budget-shopping, and provide you with inspiration and joy that spills over into your homes.
